Raw Chinese "Fried" Rice
Though rice is definitely out of question for me right now, there is a great raw alternative: Cauliflower. If you pulse it a few times in your food processor, it breaks into small little pieces that have a rice-like texture and bite.
Ingredients
2 cups cauliflower florets
3-4 green onions, ends removed
2 tbsp Cashew Nut Cheese
1/2 tbsp (or more to taste) Chinese 5 Spice
1 tsp ground coriander seed
1 cup marinated veggies
Slivered almonds for garnish
Pulse the cauliflower and green onion in a food processor until it looks like rice. Set aside. In a large bowl add cashew cheese and spices and blend until incorporated. Add cauliflower and mash or spread the spiced cheese throughout until well mixed. Add marinated veggies and sprinkle with almonds!
