I know,it sounds too good to be true, but I had an eggplant, and my How We Went Raw cookbook so I gave it a whirl. The results? Well, it doesn't really taste like bacon but the consistency and crunch is very similar. And the taste is wonderfully salty and sour! I've been using it on sandwiches all week! Absolutely delish!
